You can create your own keyboard shortcut for Superscript and Subscripts and almost any other Menu item you want. You can do this for 'Any Application' or for a specific Application like Notes.

Click on the '+' icon near bottom; then in top pop up choose All Applications or scroll down to 'Notes' If you select a single app that is all the shortcut will be applied to.
You must use the exact lettering as appears in Menu. In notes Super/Subscript is found in Format>Font>Baseline>XX
